MODERN SCANDINAVIAN BRUNCH - A COOKING WORKSHOP

Explore the bright, bold flavors of modern Nordic cuisine in this hands-on workshop. Together we'll craft a contemporary brunch that honors Scandinavian traditions while embracing seasonal California ingredients.

Our Menu:

  • Rye Benedict - A Nordic interpretation of the classic, pairs smoked salmon, perfectly poached eggs, and brown butter hollandaise on dense rye bread. Finished with fresh dill and pickled shallots.
  • Nordic Tofu Scramble - Drawing inspiration from the Swedish smörgåsbord, this protein-rich dish incorporates mushrooms, fresh herbs, and traditional spices. Served with quick-pickled vegetables and crispy shallots.
  • Winter Citrus & Fennel Salad - Blood oranges, cara cara oranges, and grapefruit paired with shaved fennel, fresh herbs, and a light aquavit vinaigrette.
  • Cardamom Scones - Buttery scones spiced with freshly ground cardamom, studded with almond slivers and local pears. Served with house-made date compound butter.

In this workshop, you'll work with traditional Nordic ingredients while learning practical techniques for poaching eggs, making emulsified sauces, quick-pickling, and pastry basics. Our chef will guide you through each recipe while sharing insights into Scandinavian flavors and methods. Class size is limited to ensure hands-on experience for all participants.

We'll conclude by sharing the morning's work together over coffee and conversation. You'll leave with recipes, techniques, and the confidence to bring these dishes to your own table.
