From nicely roasted vegetables to hearty grains and protein-rich legumes, we will teach you all the tricks and techniques to fill your meals with depth, richness, and complexity without relying on meat – or processed alternatives.

We begin with a generous bowl of heritage pea soup with the umami richness of miso and the subtle earthiness of celeriac. Experience the crispy, zesty delight of vinegar-pickled cucumbers as we play with preserving and enhancing the natural flavors of seasonal vegetables.

Then, we discover the versatility of cauliflower as we stage its potential in a variety of delicious preparations. From roasted florets to creamy purees, you’ll learn how to unlock the flavors of this humble, underrated vegetable.

We travel the balance of flavor pairing as we combine unpretentious, sweet beets with crisp, tart apples and creamy, for a colorful plate of tartare. And learn to create a creamy, comforting risotto using barley – a hearty alternative to rice.

Conclude the plant-forward feast with a decadent trifle featuring homemade almond macaroons, slow cooked fruits in-season, and luscious whipped cream.
